On a more positive note:

I made my famous venison chili yesterday. I only tried a spoon full (because it finished cooking at 11:00pm) last night. I cannot wait to eat a big bowl of it when I get home tonight.

1lb. Venison Steaks (lean) Cut into ½” - 1” cubes (beef can be substituted here if you’re a girlie man and don’t eat venison)
2lbs. Beef **steak, shoulder, etc. Try to NOT use ground beef** (trim excess fat) Cut into ½” - 1” cubes
1 cup of Peanut Oil
2 large Red Onions (Diced)
1 Green bell pepper (Diced)
1 Red bell pepper (Diced)
1 Yellow bell pepper (Diced)
1 Orange bell pepper (Diced)
3 Celery Stalks
4 Jalapenos (chopped with the seeds and all)
4 Tomatoes **I used 6 this past time***
10-20 cloves of garlic…whatever you like (chopped, but not finely chopped)
2 16oz cans of Bushes Chili beans (mild, medium, or hot chili sauce…I use HOT)
1 29oz can of Tomato Sauce
1 6oz can of Tomato Paste
5 Tablespoons of Chili Powder
3 Tablespoons of Ground Cumin
1 Tablespoon of Oregano (add to meat when cooking)
1 Tablespoon of Oregano (add later)
2 tablespoons of Ground Cayenne
2 cups of beef stock
1 12oz bottle of beer (none of that sissy light beer shit)

Add 1/2 cup of oil in a large saucepan and heat. Add the venison/beef and brown, in batches, (this will allow you to brown the meat, not boil it) and set aside. Add pepper, onion, celery, jalapeno, and garlic and saute over a low heat until they are tender.
Add the remaining oil, all of the dry spices and the venison/beef and stir, completely incorporating the ingredients. Add the stock, beer, beans, tomatoes, and tomato paste.
Cover and simmer in a slow cooker for 2 to 3 hours or until venison is fork tender. Check for seasoning and serve.
