Get ready for the only recipe a a man ever needs...

Alberto’s Best Damn Chili Period Recipe!!!
1lb. Venison Steaks (lean) Cut into ½” - 1” cubes (beef can be substituted here if you’re a girlie man and don’t eat venison)
2lbs. Beef Shoulder (trim excess fat) Cut into ½” - 1” cubes
1 cup of Peanut Oil
2 large Red Onions (Diced)
1 Green bell pepper (Diced)
1 Red bell pepper (Diced)
1 Yellow bell pepper (Diced)
1 Orange bell pepper (Diced)
3 Celery Stalks
4 Jalapenos (chopped with the seeds and all)
4 Roma Tomatoes
10-20 cloves of garlic…whatever you like (chopped, but not finely chopped)
2 16oz cans of Bushes Chili beans (mild, medium, or hot chili sauce…I use HOT)
1 29oz can of Tomato Sauce
1 6oz can of Tomato Paste
5 Tablespoons of Chili Powder
3 Tablespoons of Ground Cumin
1 Tablespoon of Oregano (add to meat when cooking)
1 Tablespoon of Oregano (add later)
2 tablespoons of Ground Cayenne
2 cups of beef stock
1 12oz bottle of beer (none of that sissy light beer shit)
Add 1/2 cup of oil in a large saucepan and heat. Add the venison and brown, in batches, (this will allow you to brown the meat, not boil it) and set aside. Add pepper, onion, celery, jalapeno, and garlic and saute over a low heat until they are tender.
Add the remaining oil, all of the dry spices and the venison and stir, completely incorporating the ingredients. Add the stock, beer, beans, tomatoes, and tomato paste.
Cover and simmer in a slow cooker for 2 to 3 hours or until venison is fork tender. Check for seasoning and serve.
**I have 90% of the chili in the slow cooker right now. I took a bowl worth of the chili out once I incorporated all the ingredients. I heated up the single serving portion in a small pot. And even though this is supposed to be slow cooked, the small portion that I took out and am eating right now is so good, I could slap someone. I can’t wait to see what the slow cooked version tastes like!! I’m not kidding, this is by far the best chili I have ever had!!!**

Don't use all that Deer Burger I gave you today Al. When I find my damn cook book tomorrow, I'll give you the chilli recipe I use out of it and you won't want anything elses again. I've even made it with beef and it SWEEEEEEEEEEEEEEEEEEEEEEEEET!

I FOUND IT!
VIRGINIA VENISON CHILI
2 pounds ground venison burger (or elk,moose,,caribou,bear - or beef if you don't like any of those listed)
1/4 cup butter
2 16oz cans kidney beans
2 8oz cans tomato sauce
3 tablespoons chili powder (add more later if you like it hotter)
1/2 teaspoon cayenne pepper (or to taste)
1 1/2 cups water
2 cloves garlic, diced (make sure you use FRESH garlic and NOT minced garlic from a jar)
1/2 teaspoon crushed oregano
1 teaspoon Italian seasoning
1 teaspoon salt
1 teaspoon black pepper
1 cup onion chopped
1 cup chilli sauce or salsa (I always use salsa)
In a dutch oven, saute venison in butter until brown. DO NOT DRAIN!
Add all ingredients to venison and simmer for 1 1/2 hours, stirring occasionally. Add water if sauce is to thick. Serve piping hot with bread and butter or rolls, with Hot sauce and cayenne pepper on the side to add to it if you like it hotter.

I have a Korean friend who owns a Chinese restaurant and he prepares the best wild game I've ever had
of course, he guards his recipes with his life

Got a decent size buck last year up in the tip of the mit. He tastes VERY good though for a northern deer. Main reason, he only made it 25 yards after I shot him. Double lung shot at 100 yards with a .30/.30.
I swear by that cook book when it comes to Venison
